Unfortunately, I wasn't able to make a video for you guys, as video capture of an iPod Touch is extremely difficult short of a physical camera. Cydia's Screen Recorder has bad frame rate and for some reason it wasn't saving. I also tried Veency + Hypercam, but the frame rate was absolutely horrible. I might try later today with my digital camera.
In the meantime, I'll tell you what might be the best evidence Apple should open up to jailbreakers. It's not multitasking, not theming, not Installous. It's a little thing called VoiceActivator. Currently, Apple's Voice Control is limited to playing music, switching albums, shuffling, and making calls. VA piggybacks on Apple's voice recognition and allows you to do anything with Voice Control. Say "Engage Cydia" and Cydia opens. "Open filesystem" and iFile open. The best part is its completely custom. Check out the video (not taking credit).
